Breville Fast Slow Cooker combines a pressure cooker with a slow cooker. You can choose which to use depending on how much time you have to cook!
Why slow cook or cook using pressure?
Pressure cooking is a time-saving method which cooks dishes in a fraction of the time they would take with a conventional cooking method (up to 70% faster). This cooking method also preserves more nutrients as very little water is required. You can cook many varied dishes with a pressure cooker, from roasts to casseroles, soups and even desserts.
Slow cooking takes the opposite approach and cooks foods for longer at a much lower temperature. By having both options you are always in control of time and are able to optimise what's for dinner and your evening schedule.
Settings
- Sauté/Sear - brown meats and sauté onions before pressure cooking or slow cooking for delicious results
- Slow Cook - select from 6 hours or 8 hours
- Pressure Cook - choose from three pressure levels
- Steam - operates under pressure, choose from three pressure levels
- Warm Indicator Light
Keep warm function
Keep Warm will activate automatically at the end of the Slow Cook programme for 30mn. It can also be activated manually, up to 99mn.
Timer
You can set a cooking timer for the Sauté/Sear, Pressure Cook and Steam programmes, from 2 to 99 mn.
Adapt your favourite recipes
Use the Pressure Cooking Chart provided in the manual to adapt recipes to be pressure cooked. If you cannot find an equivalence, cut down cooking time in a conventional oven by 70%. You can even pressure cook rice, pasta and pot roasts!

Tips
Sautéing and searing before pressure or slow cooking isn't necessary but intensifies flavour and locks in moisture.
To avoid overcooking foods when using the Steam function, it is recommended to release the pressure and open the lid immediately once the cooking cycle has finished.
The cooking bowl is dishwasher-safe, but the manufacturer recommends hand-washing it for increased longevity.
